Chef Damien

After travelling and working within several of Europe’s Michelin starred kitchens, Chef Damien has has settled in Luberon valley, where his culinary imagination continues to take flight. With Chef Damien, you can expect fresh, locally sourced ingredients, expertly paired wines alongside beautiful table settings and decoration.

Starters

  • Mises en bouche choices: Blue lobster, purple artichokes from Provence, Provence style vegetables caponata (supp. 5 euro/pers)
  • Pan Fried foie gras, roasted Provençal apple confit in ginger caramel.
  • Salade Fraicheur : buffala mozzarella, confite zucchini ribbons in olive oil and basil, confite bonite
  • Tartelette Niçoise (asparagus, roasted cherry tomatoes, French beans, yellow peppers, sweet onions confit, soft egg, bacon crisps, gluten-free pastry)

Main Courses

  • Seared medallions of lamb, cooking juice, vegetable in a Provençal tartelette with tapenade
  • Sea bass fillet cooked in rice crust, fennel mousseline with Pastis and rosemary, fine ratatouille, basil  – virgin dressing
  • Corn fed chicken cooked in hay, cookpot of spring vegetables, reduced juice
  • Rack of lamb Pays de Sault, vegetables from the market au sautoir, green butter
  • Beef tournedos AOC Charolais, sauce Chateaubriand, spring onions, celeriac mousseline, potato crisps
